Add the veges + other chopped ingredients.
NOTE *Check the taste of the batter and adjust the taste .Remember the batter doubles because of eno so the spice and salt has to be little more , else it becomes bland after adding eno / baking soda .
Heat 1 tbsp oil in a non stick pan . Spread the oil all over the pan .
Add lemon juice + eno just to the batter just before making the moonglet .
Beat the batter well to make a fluffy batter.
Pour roughly 1 cup full batter and spread it .
Cook covered on low flame for 3 to 4 mins to give a golden crust.
Flip little and check after 3 mins. If not golden the cook for more time.
Flip carefully . Give few slits with spatula /knife . [ run the knife on the the top , not till bottom]
Spread some butter all over . Continue to cook on the other side also for few mins .
When both sides are golden and crisp, take out and serve immediately.
Enjoy green moonglet with green chutney and tamarind chutney or ketchup .
For making moong dal pizza – Pour half the batter to the hot pan .Now spread a layer of grated cheese in the centre – avoid the edges. Now top it with more batter to completely cover the cheese .Serve it with ketchup. OR just top hot moonglets with grated cheese .
NOTES
- After adding eno don’t store the batter , finish the batter immediately .
- We can add different veges of our choice like methi ,spinach ,boiled green peas ,beetroot ,cabbage ,zucchini ,kasoori methi etc.
- Divide the batter into 2 batches , add ½ eno at one time and use the batter.
- You can add 2 tbsp rice flour also to the batter.
- If you don’t want to use Eno then ferment the batter overnight and add veggies at the time of making moonglet.
- You can add ¼ tsp baking soda in place of Eno fruit salt.
- You can use butter in place of oil .
- I made 2 big moonglets from 1 cup green moong dal.
- You can serve it with green chutney and sweet tamarind chutney.
- Instead of using moong dal batter , we can use idli batter also ,just add little besan to it before using.
