TAHINI SAUCE RECIPE

Tahini, sometimes called tahina, is a ground sesame butter or paste that’s traditionally used in Middle Eastern cuisine. 

Tahini or tahina is a Middle Eastern condiment made from toasted ground hulled sesame. It is served by itself or as a major ingredient in hummus, baba ghanoush, and halva. 

Tahini, also called “tahina” in some countries, may look a little like peanut butter, but it doesn’t taste like it. Tahini isn’t sweet like most nut butters, and the nutty flavor is strong and earthy, and can be a little bitter

The best substitute for tahini? Cashew butter or almond butter. 

Tahini-based sauces are common in Middle Eastern restaurants as a side dish or as a garnish, usually including lemon juice, salt, and garlic, and thinned with water.

HULLED SESAME – Hulled sesame seeds are those that have lost their hull or outer shell during the manufacturing or processing stage.  The hulled seeds are the lighter color , whereas the unhulled seeds are much darker and still have their hull or outer shell intact. Tahini made from unhulled sesame seeds tends to taste more bitter and doesn’t get quite as smooth as when it is made from hulled sesame seeds.

INGREDIENTS

  • Hulled sesame – 1 cup
  • Olive oil – 4 to 5 tbsp [ or use any oil without smell or colour ]
  • Pinch of salt

METHOD

Heat a wide pan , add the seeds and roast it on medium low flame till they start popping.Colour should not change.

Remove and allow to cool.

Transfer to a food processor or mixie jar and start blending till it becomes crumbly for almost1 minute.

Stop and scrape the bottom and sides .

Add olive oil + salt and blend again for sometimes .

It should be smooth, not gritty, and should be pourable.

You may need to process for another minute or add the additional tablespoon of oil.

Once done transfer to a sirtight bottle.

Store tahini covered in the refrigerator for one month.

It separates over time, like peanut butter would, give the tahini a good stir before using.

NOTE – use a food processor .

We need to beat the mixture well for good result .

HOW TO MAKE TAHINI SAUCE  FOR DRESSING

  • Tahini paste – ¼ cup
  • Lemon juice – 1 or 11/2 tbsp
  • Garlic finely minced – 1 tsp
  • Pinch of salt
  • Water to dilute – 4 to 5 tbsp as per the consistency you want
  • Honey – ½ or 1 tsp

METHOD

Take all ingredients in a bowl and whisk well ,

Taste and adjust the flavours as needed.

Enjoy fresh, or store leftovers in the refrigerator up to 5 days .

It goes well with falafels , fritters ,salads etc
