JAPANESE UDON NOODLES STIR FRY RECIPE

Udon is a thick noodle made from wheat flour, used in Japanese cuisine. There is a variety of ways it is prepared and served. 

INGREDIENTS

  • Cooked udon  noodles – 3 cup
  • Oil – 2 tbsp
  • Spring onion white and light green part chopped – 1 cup
  • Mushroom chopped – 1 pkt
  • Paneer cubes / boiled chicken – ½ cup
  • Garlic finely minced – 1 tbsp
  • Ginger finely minced – 2 tsp
  • Soya sauce – 3 tbsp
  • Vinegar – 2 tsp
  • Honey 2 or 3 tsp
  • Schezwan chutney – 1 ½ or as per taste
  • Water or stock – ½ cup
  • Spring onion dark green part chopped and finely chopped coriander leaves for garnish
  • Roasted sesame seeds – 1 tbsp

METHOD

Cook the dried udon noodles as per the direction given in the packet . [ 10 to 12 mins ]

Drain and keep aside

Make a mixture of stock + soya sauce + vinegar + schezwan sauce + honey and mix well . Taste and adjust .Keep aside

Heat oil in a wide pan .

Add garlic + ginger + spring onion and stir fry till translucent .

Add the mushroom and give a mix .

Spread the mushroom in a single layer and cook for 4 to 5 mins untouched.

Stir fry till no moisture and the mushroom shrinks.

Add the sauce mixture and give a nice mix.

Bring to a boil and add the paneer / chicken and mix .

Now add the cooked noodles and mix .

Simmer for a minute and off the flame. Don’t make it very dry .

Garnish with spring onion greens and coriander leaves.

Serve hot .
