NO DAL INSTANT POTATO SAMBAR RECIPE

INGREDIENTS

  • Onion 1 finely chopped
  • Tomato 1 big finely chopped
  • Potato 2 medium chopped into small cubes
  • Green chilli – 1
  • Salt to taste
  • Jaggery – 1 tsp
  • Turmeric – ¼  tsp
  • Sambar Powder – 1 tbsp
  • Asafoetida – generous pinch
  • Water –  2 ½ cup
  • Oil – 2 tsp
  • Mustard – ½  tsp
  • Curry leaves – 1 sprig

METHOD

Take onion + tomato + potato + green chilli + jaggery + + sambar pwdr + asafoeida + salt  + turmeric + 1 cup water in a cooker and pressure cook upto 4 to 5 whistles.

Once pressure releases , open the cooker and mash it well with a potato masher . [ don’t use a blender ]

Heat oil in a pan .

Crackle mustard seeds .

Add curry leaves and give a stir .

Pour the cooked potato mixture and mix well.

Add 1 or 1 ½ cup hot water . the sambar thickens on cooling , so adjust accordingly .

Adjust salt as needed .

Bring to a boil and simmer for a minute.

Garnish with coriander leaves and off the flame. Goes well with idli and dosa .
