PANEER CHEESE STUFFED PALAK PARATHAS

INGREDIENTS

  • Palak / spinach – 1 small bunch
  • Wheat flour – 3 cup
  • Oil – 1 tbsp
  • Green chilli – 1 or as per taste
  • Ginger – small piece or use ginger garlic paste – 1 tsp
  • Garam masala – ½ tsp
  • Turmeric – ¼ tsp
  • Chaat masala – ½ tsp
  • Kasoori methi – 2 tsp
  • Aamchur pwdr – ¼ tsp
  • Ajwain – 1 tsp
  • Salt as per taste
  • Oil or ghee as needed

NOTE – we can make plain dough also without adding any masalas.

STUFFING

  • Paneer grated or mashed – 1 cup
  • processed Cheese grated – few cubes or as needed
  • finely chopped coriander leaves as needed

NOTE –

  1. I am not adding any masalas in the stuffing , as I have already added in the dough .Also I have not added salt in stuffing as I have added cheese .
  2. Make stuffing by mixing grated paneer + cheese + coriander leaves .
  3. You can try any stuffing refer to my paratha recipes.

PREPARATION

Chop the stems , clean , wash and rinse. Soak the leaves  in water for 2 mins to get rid of impurities. Drain the excess water .  Grind it with green chilli + ginger  into a fine puree. [ add little water  as required ]

METHOD

Take the flour in a plate .

Add garam masala + chaat masala + amchur pwdr  + ajwain + kasoori methi + salt and mix well .

Add the puree little by little  and started mixing it .

Once mixed well , add required water and knead it into a soft dough .

Drizzle 1 tbsp oil and knead it again .

Cover and keep aside for 10 minutes .

Divide the dough into equal portions and roll it into a soft ball.

Roll the dough into small circle using a rolling pin and place enough of corn mixture in the centre..

Bring the edges of the dough together in the centre and pinch it.

Flatten this ball and roll into thick parathas by dusting dry flour.

Heat the tava or non stick pan.

Place the paratha on it .

Fry on both sides by drizzling little ghee or oil.

While frying press it with a spatula.

Once done remove it.

Serve hot with ketchup or  home made butter , curd, pickle, onion or sweet chutney and green chutney.
