PERFECT RECIPE OF PUNES FAMOUS MANGO MASTANI

Sujata Mastani was set up in 1968 and began its journey as a small shop in the busy heart of the city. Since the beginning, they have employed the traditional French Pot method to create their range of fruit-flavored ice creams or Mastanis.

There was Sitaphal Mastani, Pineapple Mastani, Vanilla Mastani, Orange and Rose Mastani, Pista Mastani, Chocolate Mastani and Mango Mastani to name a few.

INGREDIENTS

  • 1 litre full fat milk
  • 4 tbsp Custard Powder vanilla flavoured
  • ½  cup sugar
  • mango ice cream – 3 or 4 scoop
  • ¼ cup dry fruits chopped [ cashew /almonds/pista/kismis ]
  • Cherry – 3 or 4
  • 1 ½ cup of  mango cubes
  • 2 – 3 tbsp fresh cream

NOTE – adjust sugar as per taste and sweetness of mango and mango ice cream . If you like very sweet then you can increase by 1 or 2 tbsp .

METHOD

Take ½ cup milk and mix in the custard powder without any lumps.

Bring the remaining milk + sugar  to boil in a pan .

Once it starts boiling add the custard powder mixture little by little  and keep stirring.

Stir well so that no lumps are formed.

Stir and bring to a boil.

Once it starts boiling off the flame .

Allow it to cool.

Once it cools , strain and transfer to an air tight container.

Put it in the freezer to set it like ice cream for 8 hrs or overnight.

Next day remove and scrape it with a pointed object [ fork / knife ]

Transfer to a big mixie jar , add mango + fresh cream and blend it well.

Pour the thick shake into a tall glass upto ¾ level.

Top it with a chopped mango cubes .

Place a scoop of mango ice cream .

Garnish with dry fruits and cherry .
