PURPLE CABBAGE SOUTHINDIAN STYLE STIR FRY
PURPLE CABBAGE PORIYAL/ PURPLE CABBAGE STIR FRY RECIPE
Purple cabbage also known as red cabbage is a nutrient-dense vegetable.
Purple cabbage has 10 times more vitamin A than green cabbage. Both types of cabbage contain vitamin A in the form of the carotenoids beta-carotene, lutein and zeaxanthin.
Purple cabbage is a nutrient-rich vegetable linked to a variety of health benefits. These include reduced inflammation, a healthier heart, stronger bones, improved gut function.
Purple cabbage contains comparatively more nutrients and fewer calories that makes it an ideal vegetable for people aiming for weight loss.
It is the powerhouse of dietary fibers, good quality carbohydrates, potassium, plenty of vitamins and other essential minerals. The dark pigment of the cabbage indicates a higher level of antioxidants, which are known to reduce oxidative stress. A higher level of anthocyanins, an antioxidant, specifically found in purple cabbage, lowers the risk of cancer and heart diseases.
INGREDIENTS
- Purple cabbage very thinly sliced – 3 cup
- Green chilli – 2 or 3 or as per taste
- Oil – 1 tbsp
- Mustard seeds – ½ tsp
- Urad dal – 1 tsp
- Chana dal – 2 tsp
- Cumin seeds – ½ tsp
- Curry leaves – few
- Asafoetida – a pinch
- Grated coconut – ¼ cup
- Sugar – ¼ tsp
- Salt
- Water – 3 or 4 tbsp
METHOD
Heat oil in a pan .
Add mustard seeds and let it crackle .
Add urad dal + chana dal and fry till golden .
Add curry leaves + green chilli and give a mix .
Add cabbage , mix well and stir fry for a minute .
Sprinkle 3 or 4 tbsp water ,cover and cook till soft . [ hardly 5 mins depending on how thinly you have sliced ]
- Don’t over cook the vege ,it has to retain shape .
Add salt and sugar , give a mix .
Lastly add the grated coconut ,give a mix and off the flame . [ no need to cook after adding coconut ]
Serve with rice + dal / sambar + any accompaniments .
