RESTAURANT STYLE MUSHROOM GRAVY

Mushrooms are a rich, low calorie source of fiber, protein, and antioxidants. 

INGREDIENTS

  • Sliced mushroom – 2 pkt
  • Onions chopped- 2  
  • Ginger Garlic paste- 2 tsp
  • Cashew nuts- 10
  • Whole red chillies- 5 or 6
  • Red ripe tomatoes –  
  • Turmeric powder – 1/2 tsp
  • Red Chilli Powder – 1 tsp
  • Coriander powder- 2 tsp
  • Kitchen king masala – 1 tsp OR Garam Masala Powder – 1/2 tsp
  • Kasuri Methi dry roasted and crushed – 1 tsp
  • Fresh cream – 2 or 3 tbsp
  • Oil – 3 or 4 tbsp
  • Salt to taste

METHOD

Slice each mushroom into 4 if big or 2 if small.

Dry roast the cashew nuts and the red chillies in a pan on low heat for 2 – 3 mins. Set aside to cool. Coarse grind first . Now add the tomatoes and grind  it into a smooth paste.

Heat oil in a pan.

Add the chopped onions and fry till translucent.

Add the Ginger garlic paste and fry till raw smell leaves .

Lower the flame and add turmeric + red chilli + coriander powders and mix it well.

Fry it on low heat , adding a splash of water.

Now add the mushroom and mix well .

Stir fry for 1 min .

Add the salt and mix it well.

Add the tomato paste, mix well and fry for 5  mins on medium flame till oil separates.

Add 1/4 cup water and  mix well . [ water quantity as per the consistency you want ]

Cover and  cook for 2 to 3 mins till the gravy thickens a bit .

Finally add Kasuri Methi, + fresh cream and well .

Simmer for 1 minute.

Serve hot with chapati or rice.
