SEMIYA PAAL PAYASAM RECIPE

SEMIYA PAYASAM / VERMICELLI PAYASAM /PAAL PAYASAM /KHEER

INGREDIENTS

  • Vermicelli – 1 cup [ bambino brand ]
  • Boiled milk – 3 cups full cream milk
  • Water – 2 cup
  • Sugar – ¼ cup
  • Condensed milk – ¼ cup
  • Ghee – 2 tbsp
  • Dry fruits –  ¼ cup or as needed [ cashews / badam /raisins ]
  • Cardamom pwdr – ½ tsp

METHOD

Heat ghee in a pan and fry the dry fruits one by one till golden , remove and keep aside.

Add the sevai and stir fry till golden.

Remove and keep aside .

Bring 2 cups of water to boil in a pan .

Add the roasted sevai and mix well .

Cover and cook on low flame for 7 to 8 mins .

Add the hot boiled milk and mix well .

Add condensed milk + sugar and mix .

Boil for 6 to 7 mins .

Add cardamom pwdr + fried nuts and mix .

Off the flame .

Serve hot or chilled or at room temperature .

NOTE –

  • If using roasted sevai avoid frying .
  • If you don’t have condensed milk then use sugar in same quantity .
  • Adjust sweetness as per taste .
  • If the payasam thickens adjust hot milk + sugar as needed.
