TIL KI GAJAK

INGREDIENTS [ 1 CUP – 200 ML ]

  • Jaggery – 200 grms
  • Sugar –  100 grms
  • Water – 1 cup
  • Sesame seeds – 1 ½ cup
  • Oil – 2 tbsp
  • Ghee to grease the plate

METHOD- do watch the video before you start .

Grease a plate with ghee and keep aside till use.

Roast the sesame seeds till aromatic . Colour should not change

Take sugar + jaggery + water in a pan.

Cook till the jaggery melts completely.

Off the flame and strain the syrup in to another pan

Cook on high flame .

Add oil and give a nice mix .

Stir and cook , till the jaggery is cooked well .

The mixture will become frothy .

TESTING – Take a bowl of water and add few drops of the mixture in the water.

 If the mixture hardens , it means it has reached the right consistency .

Off the flame and transfer the mixture to the greased  plate as shown in the video .

Keep mixing the hot mixture using a spatula.

Once you are able to handle the mixture . start doing it with clean hands.

Use the pull method and mix.

Do it till the mixture becomes very light golden in colour

Mix in the seeds.

Start hammering .

Hammer it well and level it  into thin sheet .

Slice it with knife and let it rest for 10 mins.

Once done separate the pieces and store in airtight container.
