TOMATO MINT CHUTNEY FOR SOUTHINDIAN BREAKFAST

INGREDIENTS

  • Tomato –  1 big
  • Onion –  1 big
  • Garlic – 2
  • Urad dal – 2 tsp
  • Mint leaves chopped – 1 cup
  • Red chilli – 4 or 5 or as per taste
  • Jaggery – ½ tsp
  • Tamarind –  a small piece
  • Salt as per taste
  • Oil – 1 tbsp
  • Mustard seeds – 1 tsp
  • Curry leaves – few

METHOD

Heat 1 tsp oil in a pan, add the urad dal and fry till golden .

Add  the red chilli and give  a mix.

Immediately add the chopped onions + garlic  and fry till translucent.

Add tomatoes + salt and fry till it becomes soft.

Add mint leaves and fry till it shrinks.

Allow the mixture to cool and grind .

While grinding you can add 1/2 cup water or as needed .Transfer it to a serving bowl .

Heat 2 tsp oil in a pan , add mustard seeds + curry leaves + broken red chilli .

Pour it over the chutney .

Serve with idli , dosa chapatti , hot rice or as a side
dish .

NOTES

1.     Instead of mint  leaves try coriander leaves or curry leaves

2.     Use shallots for more flavour..

4. If you grind without water ,you  can refrigerate
for 2 days and use.
