VEG SPAGHETTI AGLIO OLIO

INGREDIENTS

  • Cooked spaghetti – 2 cup
  • Veges – 1 cup [ bell pepper/boiled corn/ cooked mushroom / zucchini etc ]
  • Olive oil – 2 to 3 tbsp
  • Red chilli flakes /finely chopped red chilli – 1 or 2 tsp
  • Garlic thinly sliced – 8
  • Parmesan cheese / any cheese grated – 3 to 4 tbsp
  • Very Finely chopped parsley /coriander leaves – 1 tbsp
  • Salt to taste

NOTE – Non vegetarians can add boiled shredded chicken

PREPARATION

Boil the spaghetti with salt till they become soft . [ 10 -12 minutes]. Check after 8 mins , if they are crunchy cook more till it becomes soft. While boiling keep stirring in between so that they don’t stick. Drain and rinse in cold water and again drain using  a strainer. Keep aside.

METHOD

Heat oil in a pan .

Add the garlic and fry till light brown .[don’t burn it]

Immediately add the veges and stir fry for few mins.The veges should not be overcooked, it should have the crunch .

Lower the flame and add chilli flakes + salt  ,mix well .

Add the cooked spaghetti and mix well so that it blends well with all ingredients .

Add parsley and mix well by tossing .

Off the flame .

Transfer to a serving bowl .

Garnish with grated cheese and serve hot
