Cauliflower paratha

                                                                      CAULIFLOWER PARATHA

Gobi paratha is a type of paratha or parantha, originating from the Indian subcontinent, that is stuffed with flavored cauliflower and vegetables. It is usually consumed during breakfast along with curd, butter or pickle..Cauliflower paratha is unleavened whole wheat flatbread stuffed with a spiced grated cauliflower filling.

Cauliflower is considered a superfood because of its nutrient-rich content. It is high in fiber, and vitamins B and C. It also contains high concentrations of carotenoids (antioxidants) and glucosinolates. Although both of these compounds have anti-cancer effects, the glucosinolates have generated the most interest.Cauliflower is nutrient dense. One cup of raw cauliflower provides over 75% of the daily minimum target for vitamin C.

INGREDIENTS

  • Wheat flour – 2 cup
  • Oil to knead the dough – 2 tsp
  • Ajwain – 1/2 tsp
  • Grated cauliflower – 1 ½  cup
  • Onion very finely chopped – 1 [ optional ]
  • Green chilli + ginger + garlic paste – 2 tsp
  • Garam masala – ½ tsp
  • Red chilli pwdr – ¼ tsp
  • Chaat masala – 1/2 tsp
  • Amchur pwdr – a generous pinch [ optional ]
  • Salt
  • Finely chopped coriander leaves – ¼ cup
  • Oi or ghee to fry the paratha

PREPARATION

  1. Mix wheat flour + salt + oil + ajwain + water and make a soft dough and keep aside for sometime.
  2. Soak the cauliflower in water + little turmeric + salt for sometime .Grate the cauliflower and squeeze tightly to remove the excess water .Make a mixture of cauliflower + onion + coriander leaves + green chilli + chilli pwdr + garam masala + chaat masala + amchur pwdr + salt .

Divide the dough into equal balls.

Roll the dough into small circle and place enough of cauliflower mixture in the centre.

Bring the edges of the dough together in the centre and pinch it.

Flatten this ball and roll into thick parathas by dusting dry flour.

Heat the tava or non stick pan.

Place the paratha on it .

Fry on both sides by drizzling little ghee or oil.

While frying press it with a spatula to allow the paratha to puff .

Once done remove it.

Serve hot with curd, pickle, onion or sweet chutney and green chutney.

  • paratha can be a healthy food. it is the way how we cook any particular food makes it healthy or unhealthy. If you cook paratha with lots of fat and ghee or make paratha stuffing with unhealthy ingredients, naturally paratha is going to be an unhealthy choice.

NOTES

  1. The cauliflower mixture should not be wet.
  2. Once the mixture is ready ,immediately make the parathas.
  3. Try same recipe for cabbage ,mixed veg ,paneer paratha
  4. While rolling the parathas , roll it gently by dusting flour, so that it does not break.
  5. The dough should be soft so that it is easy to roll.
  6. You can also stir fry the cauliflower before stuffing by adding all the masalas.
  7. Be careful as cauliflower and onion leaves water , and the mixture will become wet which will make rolling the parathas difficult.
  8. Instead of stuffing we can knead all the ingredients together and make parathas without stuffing.for this try my recipe of the below parathas recipe without stuffing.
