Aloo bhajia /PAKORA
ALOO PAKORA / ALOO BHAJIA / POTATO FRITTERS
INGREDIENTS
- Potato – 2 big
- Besan / gram flour – 1 cup
- Rice flour – 1 or 2 tbsp
- Chilli pwdr – ½ tsp
- Turmeric pwdr – ¼ tsp
- Ajwain / carrom seeds – ½ tsp
- Ginger garlic paste – 1 tsp
- Very finely chopped coriander leaves – 3 tbsp
- Asafoetida – a pinch
- Baking soda – a generous pinch
- Oil to deep fry
- Salt to taste
PREPARATION
- Wash and peel the potatoes .slice it thinly and soak in salt water .
- In a mixing bowl take all other ingredients except oil and make a medium thick batter . [ batter should coat back of a spoon ]Mix well so that there are no lumps.
- BEAT THE BATTER WELL FOR 1 TO 2 MINS – important step . Use a beater or hand to bear the batter well.
METHOD
Heat oil in a deep frying pan / kadai.
Meanwhile remove few slices and pat dry with a kitchen towel .
Take on slice ,dip in the batter till it is coated on both the sides .
Slide it into the hot oil .Few at a time ,don’t over crowd the pan .
Fry turning on both sides till light golden and crisp on medium flame .
Drain and remove on absorbent paper .
Serve hot with any sauces / dips /chutneys.
NOTES
- Adjust spices as per your taste .
- You can also add a tsp of coarsely crushed roasted coriander seeds .
