ANDHRA STYLE BHINDI CHUTNEY

INGREDIENTS

  • Ladies finger / bhindi – 100 grms
  • Coriander seeds – 1 tbsp
  • Chana dal – 2 tsp
  • Red chilli – 2 or as per taste
  • Green chilli – 1 or 2
  • Oil – 2 or 3 tbsp
  • Tamarind – small lemon size
  • Garlic – 4
  • Mustard seeds – ½ tsp
  • Urad dal – ½ tsp
  • Asafoetida – generous pinch

METHOD

Wash and wipe the ladies finger.

Chop into 1 inch size.

Heat oil in a thick bottomed pan on low flame , fry chana dal.

Now add coriander seeds and fry till golden .

Lastly add red chillis and give a mix .

Remove and keep aside.

Same pan add bhindi and stir fry them till the stickiness goes off.

Add tamarind and give a mix .

Off the flame and allow to cool .

In a dry blender jar add fried coriander seeds and chana dal mix and blend into coarse mixture .

Add fried bhindi  , press whip or pulse button in the mixer grinder.

Do not over blend else it will become sticky.

Temper it with mustard seeds + urad dal + garlic and asafoetida .

Serve bhindi chutney with hot piping rice.
