BEETROOT SPAGHETTI

BEETROOT SPAGHETTI / PASTA

INGREDIENTS

  • 1 cup spaghetti
  • Salt to taste
  • 1 small sized beetroot
  • 2 clove garlic
  • ¼ or ½ tsp chilli flakes
  • 2 tbsp olive oil
  • 2 tbsp Cheese grated or fresh cream
  • 2 tsp lemon juice
  • 1 tsp oregano / mixed herbs /rosemary

METHOD

Boil water with salt + few drops of oil.

Add spaghetti and cook as per the instructions given on pkt .

Switch off and rain immediately. Rinse with cold water to prevent from further cooking. Set aside.

Cook beetroot till soft . Grind it with garlic + 2 tbsp water + lemon juice + oregano / mixed herbs /rosemary + chilli flakes  into smooth puree .

Heat a pan with olive oil .

Add the beet paste and stir fry for 2 mins.

Add cooked pasta + cream and mix it well.

Transfer to serving plate.

Sprinkle cheese + mixed herbs / oregano and serve hot .
