Poha is a wholesome meal. It is a good source of carbohydrates, packed with iron, rich in fibre, a good source of antioxidants and essential vitamins and is gluten free.

Poha or pohe is a quick breakfast & snack made with beaten rice or flattened rice, spices, peanuts and onions. It is not only popular in Maharashtraian and Gujarati cuisines but also in many other regions of India.

Poha is prepared in a similar way in most regions.an authentic and traditional western indian breakfast recipe made with beaten rice. it is a simple and healthy meal recipe, which can be made within minutes and can be served for any occasion. it is generally served as it is but tastes better when topped with fresh coconut or even with a combination of farsan or mixture.

Carrots are a particularly good source of beta carotene, fiber, vitamin K1, potassium, and antioxidants . They also have a number of health benefits. They’re a weight-loss-friendly food and have been linked to lower cholesterol levels and improved eye health.

INGREDIENTS

  • Poha –  2 cup [ medium ]
  • Onion finely chopped – 1 big
  • Grated carrot  – 1 or 11/2  cup
  • Green chilli chopped – 2 or 3 or as per taste
  • Sugar – 1 tsp
  • Oil – 2 tbsp
  • Mustard seeds + jeera – 1 tsp
  • Curry leaves – few
  • Lemon juice – 1 tsp
  • Finely chopped coriander leaves for garnish
  • Fresh grated coconut for garnish [optional ]
  • Peanut – 3 or 4 tbsp
  • Salt as per taste

NOTE – instead of carrot we can try with beetroot / potato / cabbage / peas .

PREPARATION

  1. Keep all ingredients ready before you start .
  2. Take the poha in a strainer as shown in the video .Clean ,wash  and rinse  the poha  twice or thrice. Drain the water completely . Keep aside for 10 mins.

METHOD

Heat oil in a pan add the peanuts and fry till golden .Remove and keep aside .

Now add mustard seed + jeera and allow to crackle.

Add green chilli + curry leaves and give a stir .

Add grated carrot and stir fry for a min .

Add onion and stir fry for a min .

Add salt and give a mix .

Add soaked poha and mix well , till complete poha is coated .

Lower the flame and cook for 1 minutes . Stir in between .

Off the flame garnish with finely chopped coriander leaves + ¼ cup raw onions + peanut + coconut + roasted jeera pwdr and drizzle the lemon juice as required .

Serve hot.

NOTES

  1. Don’t brown the onions. It should have the crunch .
  2. If the poha is not soaked well, then drizzle few drops of water , cover and cook on lowest
