CRISPY MURMURA VADA

MURMURA VADA / PUFFED RICE CUTLET

INGREDIENTS

  • Murmura – 3 cup
  • Curd – ¼ cup
  • Wheat flour – ¼ cup
  • Barik sooji / fine rava  – ¼ cup
  • Ginger green chilli paste – 1 tbsp
  • Saunf / fennel seeds – 1 tsp
  • Sesame seeds – 1 tbsp
  • Asafoetida – a pinch
  • Turmeric – ¼ tsp
  • Coriander pwdr – 1 tsp
  • Garam masala pwdr – ¼ tsp
  •  Chilli pwdr – ½ tsp
  • Chaat masala – ½ tsp
  • Sugar – 1 tsp
  • Finely chopped coriander  leaves
  • Lemon juice – 1 tsp
  • Oil – 1 tbsp
  • Salt to taste
  • Oil to fry

METHOD

Wash and soak the murmura in 3 cup water for 2 mins .

Squeeze and completely drain off the water.

Transfer to a big bowl and mash it well with clean hands .

Bring it to a texture like mashed potatoes.

Now add curd and mix well.

Cover and keep aside for 5 mins .

Add wheat flour + rava and mix well.

Add all the other ingredients one by one and mix well .

Knead it into a dough like mixture .

Wet your palms , take a small portion roll it into smooth ball , sprinkle some sesame seeds and flatten it .

Again apply some water on the vada upper surface.

Heat oil in a pan.

When the oil is hot slide in the  vadas.

Flip  and fry them from both sides on medium flame till crispy and golden brown from both sides. Remove it on an absorbent paper .

Serve murmura vadas with any chutney / sauce / dips with a cup of tea .
