DAL KANDA | DRY CHANA DAL FRY

Dal Kanda is a simple dish using Chana dal and onions. It is a very simple and flavourful dry lentil preparation. The name “Dal Kanda” literally translates to lentils and onions. In this recipe dal kanda is prepared with split Bengal gram lentil (chana dal) cooked with a lot of onions.

INGREDIENTS

  • Chana dal – ½ cup
  • Oil – 1 tbsp
  • Jeera – ½ tsp
  • Mustard seeds – ½ tsp
  • Garlic crushed – 1 tbsp
  • Finely chopped onion – 2
  • Curry leaves – few
  • Green chilli finely chopped – 2 or as per taste
  • Turmeric – ¼ tsp + ¼ tsp
  • Asafoetida – pinch
  • Coriander leaves finely chopped – 2 or 3 tbsp

METHOD

Wash and soak chana dal for at least 2 – 3 hours.

Drain the soaked dal and add to a deep pot along with some salt and ¼ tsp turmeric.

Add about 1 or  1 ½  cup water, enough to cover the dal. Cook covered till the dal is soft but not mushy. You need to keep checking the dal in between if more water is required or not.

Once done off the flame and keep aside.

Heat oil in a pan . add jeera + mustard seeds and let it crackle .

Add onion + green chilli + curry leaves and stir fry till translucent.Dont over fry the onions .

Add turmeric + asafoetida and give a nice mix.

Add the cooked along with the stock and mix well.

If its very dry then add more hot water .

Adjust salt as needed and mix well.

Bring to a boil .

Simmer on low flame for 2 or 3 mins .

Garnish with coriander leaves and off the flame.

Serve with rice or bhakri or chapati…
