DELHI STYLE CHOLE RECIPE /KEECHAD CHOLE

INGREDIENTS

  • Kabuli chana – 1 cup
  • Ghee – 3 to 4 tbsp
  • Green chilli – 1 or 2
  • Finely minced ginger – 1 tsp
  • Finely chopped onion – 1 big
  • Finely chopped tomato – 2
  • Finely chopped coriander leaves – 2 tbsp
  • Amchur powder – 3/4 or 1 tsp
  • Fennel pwdr / saunf – ½ tsp
  • Jeera pwdr – 1 tsp
  • Coriander pwdr – 1 tsp
  • Red chilli pwdr – 1 ½ tsp or as per taste
  • Garam masala – ½ tsp
  • Chana masala – 1 1/2 tsp
  • Kasoori methi – 1 or 2 tsp
  • Salt / black salt to taste

METHOD

Soak kabuli chana overnight .

Take the soaked chana  with masala pwdrs + kasoori methi + coriander leaves + salt + onion + tomato + ginger + green chilli with enough water and pressure cook on medium flame upto 1 whistle.

Now lower the flame to lowest and cook for 12 to 15 mins .

Once the pressure releases , open and mix well.

Add 1 cup or more hot water .The chole thickens on cooling.

Adjust salt if needed .

NOTE – we can just boil this for a min and serve without ghee.

Heat a pan with ghee.

Once the ghee becomes hot .

Lower the flame and add the cooked chole and mix well.

Simmer on low flame  for 5 to 7 mins .

Chole is ready to serve .

Goes well with bhature / tikki /rice etc

NOTE

  1. We can add tea bag while cooking the chole for dark colour .
  2. Adjust masalas as per taste .
  3. Black salt adds taste.
  4. Don’t reduce the ghee .
