Drumstick leaves with moongdal /MORINGA LEAVES COOKED WITH MOONG DAL
DRUMSTICK LEAVES WITH MOONG DAL [ The leaves have many beneficial nutritional Values ]
INGREDIENTS
- Drumstick leaves – 4 OR 5 cups [ I used a whole bundle ]
- Moongdal – ½ cup
- Onion finely chopped – 1
- Green chilli chopped – 3 or 4 or as per taste
- Freshly grated coconut – ¼ cup
- Oil – 1 tbsp
- Mustard seeds – 1 tsp
- Salt to taste
PREPARATION
- Pluck only the leaves , wash ,rinse and drain the excess water by placing it in a colander .
- Clean ,wash ,rinse and soak the dal for sometime .Pressure cook with little turmeric + salt till it is soft [ 1 whistle] but whole .Should not get mashed .[ u can also cook in an open pot ]
METHOD
Heat oil in a pan ,add mustard seeds and allow it to crackle.
Add onion+ chilli and saute till translucent .
Add the leaves and mix well.
Add salt and mix well.
Sprinkle ¼ cup water and allow it to cook. [water is absorbed – there is no moisture ]
Once the leaves are cooked , add the cooked dal and mix well.
Adjust salt if required.
Finally garnish with coconut and off the flame .
Serve as a side with rice + curry .
NOTE
- Plucking the leaves is a big task – roll the whole bundle in a cloth or newspaper and keep it out for overnight .Next day just shake the stems ,the leaves will fall.
- We don’t get it much in market ,so see if there are any drumstick trees near your house , tell some one to pluck it. [ I got it from my building garden].
- Buy tender leaves.
- While cleaning remove only the leaves not the stalk.[its a difficult job].
- You can keep the bunch of leaves for a day automatically only the leaves fall off.
- You can fry and add it to sambar.
- Instead of onions you can just add crushed garlic
- You can also add moong dal and make it like regular green leaves.
- The texture after cooking will not be like regular greens
- You can also make palak dal ,pakoda or even cook it with potatoes.
- You can also add grounded roasted peanuts towards the end
- You can add the leaves in the process of making ghee from butter at home
- You can add it in the batter of dosa or adai
- You can add scrambled egg also
