EGGLESS KALA JAMUN FRUIT CAKE RECIPE /JAVA PLUM CAKE RECIPE

INGREDIENTS
- Fine sooji – ½ cup
- Maida – 1 cup
- Curd at room temperature – ½ cup
- Milk at room temperature – ¾ cup
- Sugar pwdr – ¾ cup
- Oil – ½ cup
- Baking powder – 1 tsp
- Baking soda – ½ tsp
- Vanilla essence – 1 tsp OR cardamom pwdr – ½ tsp
- Jamun or any fruit compote – 5 to 6 tbsp
PREPARATION OF JAMUN COMPOTE
- Take 12 to 15 jamuns , deseed it and puree it .
- Take the puree + 2 tbsp sugar and cook 4 to 5 mins .
METHOD
Take sooji + milk + curd and mix well till no lumps are formed .
Cover and keep aside for 30 mins.
Sieve together maida + baking pwdr + baking sugar and keep aside .
Now add sugar + oil and mix well
Add the maida and mix .
Pour half the batter in a grease tin .
Spread a layer of compote.
Again top it with cake batter.
Now swirl the batter with tooth pick.
Bake it for 45 to 50 mins at 180 * in preheated oven .
Once done allow to cool well.
Slice and serve .
