GUJARATI BHAVNAGIRI MIRCHI PAKORA / STUFFED MIRCHI PAKODA
GUJARATI BHAVNAGRI MIRCHI PAKODA
BHAVNAGRI / RAJKOT mirchi pakora is a batter fried fritter made with green chillies with a stuffing of besan farsaan.
INGREDIENTS
- Chillies – 10 or 12 bhavnagri chillies
- Besan sev or boondi or gathia – 1 cup
- Fennel seeds – 2 tsp
- Chilli powder – ½ tsp
- Sugar – 1 tbsp
- Garam masala pwdr – 1 tsp
- Coriander pwdr – 2 tsp
- Lemon juice – 2 tsp
- Salt to taste
FOR THE BATTER
- Besan – 1 cup
- Salt to taste
- Red chilli pwdr – ¼ tsp
- Turmeric pwdr – pinch
- Ajwain – ¼ tsp
- Hot oil – 2 tsp
PREPARATION
Wash the chillies, pat dry with a kitchen towel , make a slit and keep aside .
Grind the sev with chilli pwdr + sugar + garam masala + coriander pwdr + saunf + salt into a coarse mixture. Adjust taste .Add in the lemon juice and mix well.
Stuff the chillies and keep aside .
METHOD
Add chilli pwdr + turmeric + ajwain + salt to the sieved chickpea flour.
Gradually add water and make a batter resembling dosa batter.
Add the hot oil and give a nice mix .
Heat oil for deep frying
Dip the stuffed chilly in the batter and drop in oil.
Flip in between, fry till they are crisp and golden from all sides .
Once done remove on absorbent paper .
Serve hot with side accompaniments .
