HEALTHY PUMPKIN DAL SOUP

INGREDIENTS

  • Pumpkin peeled and chopped – 2 cup
  • Masoor dal  – 2 tbsp
  • Butter + oil – 2 tsp
  • 1 Bay leaf  + 1 clove  + 1 small cinnamon piece
  • Onion thinly sliced – 1 small
  • Garlic chopped 1 tbsp
  • Green chilli – ½
  • Finely chopped coriander leaves stem – 2 tbsp
  • Water – 2 or 3 cup as per the consistency
  • Salto to taste
  • Pepper pwdr as needed
  • Mixed herbs / oregano – 1 tsp

METHOD

Wash and soak the dal for 5 to 10 mins

Heat oil + butter in a cooker

Add bay leaf + cinnamon + clove and give a stir

Add onion + garlic + chilli and stir fry till golden .

Add dal + pumpkin + coriander leaves stem and give a mix .

Add 1 cup water + salt and mix well .

Pressure cook upto 3 whistles.

Once the pressure releases , open and discard the bay leaf + cinnamon + clove.

Blend the the pumpkin well.

Add 2 cup water and adjust salt as needed .

Add pepper pwdr + mixed herbs or oregano and give a mix . Bring to boil and serve hot .

NOTE

Instead of adding plain water , use stock .Recipe

If not adding stock , we can use maggi cubes or a generous pinch of aromatic pwdr.
