HOMEMADE GEHU KI KURDAI MAHARASHTRIAN RECIPE

GEHU KI KURDAI MAHARASHTRIAN STYLE / WHEAT FLOUR FRYUMS

INGREDIENTS

  • Wheat – 2 cup / 500 grms
  • Salt – 1 tsp
  • Alum / fitkari  – 1/4 tsp

METHOD

Wash the wheat thoroughly and soak it for 3 days.

Wash and change the water daily 1 or 2 times during summers.

Then grind the soaked wheat by adding little water as needed. Extract the wheat milk .

Strain the mixture through a strainer. Separate the wheat milk and wheat skin . Discard the skin .

Again strain the wheat milk through a thin muslin cloth.

Cover it and keep it for  8 hours or  overnight fermentation.

Next day you will see water separated and the wheat sticky thick paste settled at bottom .

Drain the excess water and discard .

Measure the wheat paste quantity and take same amount of water in a separate pan .

Add salt + alum powder in the water .

Stir and cook on  medium flame .

When it starts boiling , turn the flame to low

Now add the wheat mixture in it gradually and stir it continuously till it thickens .

Once it thickens , cover it and cook it for 6 to 7 mins. Stir in between with wooden ladle.

The mixture becomes transparent .

NOTE –  You can check it whether it is cooked by making your hands wet and touching the mixture . If the mixture sticks to your hands then cook it for some more time or if it will not stick to your hands then turn off the flame .

Cover and keep it for 2 – 3 mins .

Take a Kurdai/Kudlai  / chakli maker with fine holes .

Fill the mixture in it, and make the kurdai on a plastic sheet. Start making when the mixture is hot .Make thin layered chaklis .

Keep them for at least 2 to 4 days for sun drying and dry them properly till it hardens .

We can also dry under the fan , it may take 5 to 6 days .
