HOMEMADE TUTTI FRUTTI USING WATERMELON RIND

Tutti frutti is a colorful confectionery containing various chopped and usually candied fruits, or an artificial or natural flavouring simulating the combined flavour of many different fruits.
INGREDIENTS
- 3 cups chopped bits of watermelon rinds
- 3 cups water
METHOD
Peel and discard the green part of the watermelon rinds using a peeler or a sharp knife. There should be no red part also .
Chop the white portion only into small bits.
Take the bits in a pan and cover it with 3 water. Boil and cook the pieces for about 8 – 10 minutes or until the pieces begin to look translucent.
Important – Do not overcook them or soften them till they turn mushy. Drain off the water and keep aside.
FOR THE SYRUP
- 1 cup sugar
- 1 cup water
- red, orange, yellow & green food colours (or as required)
- any essence as needed like vanilla , butterscotch , pista ,etc
SUGAR SYRUP
Take sugar + water in a pan and let the mixture come to a boil.
Cook until the sugar melts completely .
Add the cooked watermelon bits and mix well .
Bring the mixture to a boil and simmer on low flame for 4 to 5 minutes.
Now, divide the mixture + the syrup equally into different pans depending on how many colours you want to use.
Add the food colours + esssences and let it soak for 30 mins to 1 hr .
Transfer the tutti frutti into a large strainer , so that the excess syrup drains out . Allow it to cool.
Spread it evenly on a plate and let it sun dry or fan dry .
Transfer it into clean glass jars and store in the refrigerator.
Tutti frutti is used in making cookies , bread , bun , cakes , any desserts etc
NOTES
- Always use a clean, try spoon to remove the tutti frutti
- Since there are no preservatives added to the tutti frutti ,it does not have a very long shelf life.
