How to make sesame rice

ELLU SADAM / SIMPLE BLACK SESAME RICE RECIPE / TIL RICE

Sesame seeds are an excellent source of manganese and calcium, both of which help your bones grow healthy and strong.

The oil-rich seeds contain superb organic properties that restore the skin’s glow and hair’s strength. 

Til contains a considerable amount of calcium. And calcium is an essential nutrient that helps keep the bones and teeth strong. 

Sesame oil is a highly unsaturated oil, thus its very nature may regulate glucose levels.

Along with numerous vitamins and minerals, sesame seeds also have high-fat content, mainly omega-3 fats, which are good sources of energy.

Til is rich in essential minerals and provides your body with a much-needed dose of copper, magnesium, and calcium.

INGREDIENTS

  • Sesame/til  seeds – 4 tbsp [ white or black ]
  • Skinless Urad dal – 1 tbsp
  • Red chilli – 3 or 4 or as per taste
  • Black pepper corns – 5 or 6 corns
  • Cumin – ½ tsp
  • Cooked rice or left over rice – 2 cup [rice cooked with salt and grains separated not mushy ]
  • Oil + ghee – 1 tbsp
  • Mustard seeds – ½ tsp
  • Cashew broken – few
  • Curry leaves – few
  • Salt as per taste

PREPARATION

  1. First roast the red chilli and remove .
  2. Roast the urad dal till golden brown remove.
  3. Roast the pepper corns + jeera remove and keep aside.
  4. Finally roast he sesame . [roast all the ingredients separately one by one without oil ]
  5. First grind the urad dal + red chilli , add the sesame + pepper corn + jeera and pulse grind with intervals to a coarse pwdr . [don’t grind on high speed or oil will ooze from the sesame ]

METHOD

Heat oil + ghee in a pan , add the mustard seeds and curry leaves and allow it to splutter .

Add cashew and fry for few seconds.

Add the cooked rice and mix well.

Add the sesame pwdr + salt and mix well till the rice gets coated with the powder.

Off the flame . [after mixing no need to cook ]

Serve with papad and raita.
