KARNATAKA KHARA BHAT RECIPE
KHARA BHAT / MASALA RAVA BHAT
khara Bath also known as Rava Bath , a famous breakfast from Karnataka. It is made with semolina, mix veggies, curry leaves and spices. It is a simple and easy south indian breakfast recipe . Khara bath is a variation of the most popular Rava Upma.
INGREDIENTS
- Rava – 1 cup
- Water – 4 cup
- Oil + ghee – 3 tbsp
- Mustard seeds and urad dal – 1 tsp
- Curry leaves – few
- Onion finely chopped – 1 small
- Green chilli finely chopped – 1
- Ginger garlic paste – 1 tsp
- Tomato finely chopped – 1
- Sugar – 1 tsp
- Garam masala – ½ tsp
- Sambar pwdr – ½ tsp
- Coriander powder – 1 tsp
- Turmeric pwdr – ¼ tsp
- Red chilli pwdr – ¼ or as per taste tsp [we have already added green chilli ]
- Mixed veges like beans /cauliflower /boiled peas or corn /carrot finely chopped – 1 cup
- Finely chopped coriander leaves – 2 tbsp
- Freshly grated coconut – 2 tbsp for garnish
NOTE – We can use 1 TBSP vaangi bhaath masala powder or goda masala powder instead of garam masala pwdr + coriander pwdr + sambar pwdr
PREPARATION
- Very finely chop the veges .
- Boil the green peas for 3 or 4 mins .
- Dry roast the rava on medium low flame by continuously stiring till aromatic for 3 to 4 mins .[ colour should not change ]
METHOD
Heat oil + ghee and add mustard seeds + urad dal and let them crackle .
Add onion + green chilli + curry leaves and fry till translucent .
Add ginger garlic paste and fry till raw smell leaves .
Add tomato + salt and cook till oil separates .
Add coriander leaves and fry till it reduces .[ I forgot to add ]
Add chilli pwdr + turmeric + garam masala pwdr and stir fry .
Add the mixed veges and stir fry for a minute .
Add sugar and mix well .
Add water and allow it to roll boil .
Check salt ,if required add .
Once its starts boiling ,simmer the flame and add the roasted rava .
With one hand add the rava and with other hand keep mixing to avoid any lump formation .
Mix well and cover it with a lid .
Cover and cook till the rava becomes soft for 2 to 3 mins – stir in between so that it does not stick to the bottom .
Off the flame and let it sit for few mins .
Garnish with coconut and coriander leaves .
Serve hot . While serving drizzle few drops of lemon juice .
NOTES
- Same recipe can be done in a different way – instead of boiling the water and adding the roasted rava ,you can add the roasted rava first in the masala and add hot water .
- You can drizzle few drops of lemon juice towards the ending .
- As the veges are finely chopped ,it cooks fast .I have used boiled green peas.
- Roasting of rava is compulsory .else the upma will be sticky .
- For grainy upma add 2 1/4 cup water and for loose texture add upto 3 cup .
- Instead of ginger garlic paste you can just add 1/2 tsp grated ginger .
- For plain rava upma avoid veges and masala pwdrs.
- Add veges and masala pwdr as per taste .
- Don’t reduce the oil and ghee .
- Instead of adding garam masala pwdr ,we can add few whole garam masala in the oil.
- You can also prepare rava vangi baath by adding vani baath masala.
- Y not try with sambar masala pwdr .
HOME MADE VANGI BATH POWDER RECIPE
INGREDIENTS
- Dhania/coriander seeds – 1 ½ tsp
- Chana dal – 1 tsp
- Urad dal – 1 tsp
- Red chillies – 3 or 4 or as per taste
- Cinnamon – 2 inch stick
- Cloves – 3 nos
- Black stone flower – 1 no
- Asafoetida – a pinch
- Grated coconut – 1 tsp
METHOD
Dry roast all the ingredients and powder them nicely. Store this powder in a box and use it whenever needed.
