LITCHI TENDER COCONUT MOCKTAIL

INGREDIENTS

  • Litchi – 250  grms
  • Tender coconut – 1
  • Sugar or honey to taste [  optional ]

METHOD

From 1 coconut I got 2 cup of water and around 3/4 cup of thin malai .

Refrigerate both the ingredients till chill . Else we can use ice cubes .

Take the coconut water + malai  + litchi flesh + sugar / honey and blend it .

*. Instead of adding sugar / honey , we can add a scoop of vanilla ice cream .The ice cream will also enhance the taste.

We don’t have to blend it till smooth , it should have the crunchy bits texture .

Once done pour it in a tall glass and serve chilled .

VARIATION

We can reduce the coconut water and add sprite drink while serving and add few torn mint leaves . [ here no need to add any sweetener ]
