MAHARASHTRIAN PANCHAMRUT RECIPE / PANCHAMRUT SWEET ,SPICY AND SOUR / |HOW TO MAKE PANCHAMRUT

Panchamrut (Panchamrit, Charnamrut) is a traditional ayurvedic concoction made for Hindu poojas and religious rituals. It is made using 5 ingredients (Paanch Amrut) and is considered holy and sacred. 

Panchyamrut” is a festive recipe, which is prepared primarily by Maharashtrian Brahmin and Kayastha communities. It is sweet, sour and spicy in taste. “Panchyamrut” means – offering to the Lord by mixing the 5 foods – Or Pancha-Khadya, namely – Dates, Cashews, Coconut, Peanuts and Raisins.

INGREDIENTS

  • Dry date pieces – 1 tbsp
  • Dry coconut pieces – 1 tbsp
  • Cashew nut pieces – 1 tbsp
  • Roasted Groundnut pieces – 1 tbsp
  • Raisins – 1 tbsp
  • Green chilly chopped – 2  
  • Asafoetida – generous pinch
  • Turmeric – ¼  tsp
  • Red chilly powder – ½ tsp
  • Salt to taste
  • Tamarind paste – 1 tbsp
  • Jaggery powder  – 1 tbsp
  • Date pulp – 1 tbsp
  • Roasted white sesame powder – ½ tsp
  • Roasted Poppy seed powder – ½ tsp
  • Roasted groundnut powder – ½ tsp
  • Thick coconut Milk – ¼ cup
  • Oil – 1 tbsp
  • Mustard seeds – ½ tsp

METHOD

Soak the peanut + cashew + dry dates + coconut raisins in water for few hrs .

Heat oil in a pan .

Add mustard seeds and let it crackle.

Add chilli + asafoetida and give a stir.

Drain and add the soaked items and give a nice mix.

Stir fry for a minute.

Add turmeric and chilli pwdr and stir fry for few seconds.

Add ½ or ¾ cup water + salt and mix well . [ you can add the soaked water ]

Cover and cook for 2 to 3 mins.

If its very dry , then add little water.

Now add jaggery + Roasted white sesame powder  + Roasted Poppy seed powder  + Roasted groundnut powder  + tamarind pulp + dates pulp + coconut milk and mix well .

Stir and cook for a min and off the flame .

It has to be thick and not thin .
