PIYUSH RECIPE

Piyush Recipe – a coolant drink for summers. 

Piyush is a thick yogurt based summer drink prepared with shrikhand, milk and nuts. This dessert drink is rich, creamy and delicious than lassi and famous in Maharashtra and Gujarat.

INGREDIENTS

  • Thick butter milk / chaas – 2 cup [ 1 cup curd mixed with 1 cup water ]
  • Shrikhand – 1 cup [ plain or any flavour ]
  • Sugar – 1 or 2 tbsp or as per taste
  • Nutmeg Powder – generous pinch
  • Cardamom powder – ¼ tsp [ optional as shrikhand has ]
  • Few saffron strands
  • Pistachios thinly sliced as needed

METHOD

Take shrikhand , buttermilk , sugar, cardamom powder, nutmeg powder in a mixing bowl.

With a electric blender or hand blender or whisk or wooden hand churner [ madani  ] , just blend everything well till smooth and creamy.

Adjust sugar if needed.

Refrigerate  for 2 or more  hours till  chilled.

Pour the chilled piyush in a glass , and top with pistachio and saffron.

Serve immediately.

You can also keep the piyush for a day in the refrigerator.
