Poha kheer
POHA KHEER / CHOORA KHEER
INGREDIENTS
- Poha – ¾ cup
- Ghee – 2 tsp
- Milk – 3 cup
- Broken cashew – 2 tbsp or as required
- Sugar – 6 or 7 tbsp or as required
- Cardamom pwdr – 1/8 tsp
PREPARATION
Heat ghee in a pan ,add the cashew and fry till golden.Remove and keep aside.
Take the poha in a strainer ,wash and rinse it .Drain of the complete water .[ no need to soak ]
In same pan add the rinsed poha and stir fry for 2 or 3 mins .Remove and keep aside. [ NOTE – you can avoid frying and add the soaked poha directly ]
METHOD
Boil milk in another pan .
Reduce it to ¾ .
Add the sugar + cardamom pwdr and mix well.
Add the poha and cook on low flame till the pohas becomes very soft .
Cook till you get a semi thick consistency and off the flame .
Garnish with cashew and serve .
VARIATION
- We can reduce sugar and add condensed milk for rich taste.
- We can also add 1 or 2 tbsp of cashew and poppy seeds .
NOTES
- Adjust sugar according to your taste.
- Cook till the poha becomes very very soft else on cooling it hardens.
- You can use full cream milk .I used toned milk .
- Serve either hot or chilled .
- We can also powder the poha and make to get a phirni like texture.
- You can add the poha without washing also.
- You can also add pista /almonds/ raisins.
- It thickens on cooling .
- Instead of sugar ,v can use jaggery.
