PUDHINA CHUTNEY FOR SOUTHINDIAN BREAKFAST
PUDHINA CHUTNEY FOR SOUTHINDIAN BREAKFAST /MINT LEAVES CHUTNEY
INGREDIENTS
- Fresh mint leaves – 2 cup
- Fresh coriander leaves – ½ cup
- Curry leaves – 1 sprig
- Onion – 1
- Garlic cloves – 4 or 5
- Ginger – small piece
- Green chilli – 3 or 4 or as per taste
- Urad dal – 2 tsp
- Cumin seeds – ¼ tsp [ optional ]
- Freshly grated coconut – ¼ cup
- Oil – 2 tsp + 2 tsp
- Mustard – ½ tsp
- Broken red chilli – 1
- Salt to taste
- Water – ½ cup
METHOD
METHOD
Heat 2 tsp oil , add urad dal + jeera .
Saute until golden.
To the same pan add onion + garlic + ginger + green chillies and stir fry till translucent .
Add coriander leaves + curry leaves + mint leaves .
Saute until it shrinks .
Off the flame and allow to cool .
Now transfer this to a mixer jar along with coconut + salt .
Grind it to a chutney consistency by adding ½ cup water .
Heat 2 tsp oil add mustard seeds let it crackle then broken red chilli and switch off.
Add tadka to chutney and mix well.
Serve Pudina Chutney with idli or dosa or any southindian breakfast and enjoy.
