PUMPKIN MOONG DAL CURRY

Yellow Pumpkin Dal Recipe is a comforting and wholesome dal made with moong dal and pumpkin. Serve with rice or phulka for a complete meal.

Pumpkins contain a wealth of antioxidants. Vitamin C, vitamin E, and beta carotene support eye health and prevent degenerative damage in older adults.

Moong dal is an excellent food for the vegetarians because it is a rich source of protein. Interestingly, Moong dal comes in handy for those on a weight loss diet. This dal provides them with the nutrition they need and help them in burning excess fat.

INGREDIENTS

  • Moong dal – ½ cup soaked 30 mins
  • Chopped pumpkin cubes – 250 grms
  • Garlic crushed  – 1 tsp
  • Oil – 1 tbsp
  • Jeera – 1 tsp
  • Red chilli pwdr – 1 tsp or as per taste
  • Turmeric – ½ tsp
  • Tomato – 1 finely chopped
  • Coriander leaves finely chopped – 2 tbsp

METHOD

Soak the dal for 30 mins .

Heat oil in a pan .

Add jeera and let it splutter .

Add garlic and stir fry for few secs.

Add red chilli pwdr + turmeric .

Add pumpkin + salt + coriander leaves .

Stir fry for 2 mins.

Add dal and mix well .

Cover and cook till the dal is half done .

NOTE – the dal has to cook in the water released by pumpkin .If its very dry then add little water with the soaked dal .

Add tomato and mix well .cook on low flame till tomaoes soften

Add hot water and cook till dal softens – you can see cracks on the dal .

Off the flame and garnish with coriander leaves .

The dal thickens a bit on cooling , so adjust water accordingly

Serve hot with rice .
