PUNJABI STYLE AMRITSARI NUTRI KULCHA RECIPE

A healthy and tasty dish to spice up your dinner/lunch table.
Amritsari Nutri Soya Chunks is a very famous Punjabi Masala dish which is very tempting, additionally, a great source of proteins.
INGREDIENTS
- Nutri chunks – ¾ cup
- Nutri granules – ¼ cup
- Few whole garam masalas – [ bay leaf + green cardamom + clove + red chilli + cinnamon + black cardamom ]
- Onion chopped – 2 big
- Tomato – 2 big
- Green chilli – 2
- Fried onion paste – 2 tbsp
- Oil – 3 tbsp
- Ghee – 1 tbsp
- Ginger garlic paste – 2 tbsp
- Finely chopped capsicum – 1 cup
- Garam masala pwdr – 1 tsp
- Red chilli pwdr – 2 tsp
- Maggi masala magic powder – 1 small pkt
- Turmeric pwdr – ½ tsp
- Coriander pwdr – 1 tbsp
- Kasoori methi crushed – 1 tbsp
- Soya sauce – 1 tbsp + ½ tsp
- Red chilli sauce – ½ tsp
- Chopped coriander leaves for garnish
- khulchas to serve
PREPARATION
- Soak the nutri for 10 mins. Boil water in a pot .Add little salt and 1 tbsp soya sauce .Add the nutri and cook for 7 to 8 mins.Once done rinse / wash and squeeze the excess water. Keep aside.
- Make a paste of Garam masala + Maggi powder + Turmeric pwdr + Coriander pwdr + ¼ cup water ..
- Fry 1 big chopped onion till brown and make a fine paste of it .We need 2 tbsp of onion paste .
- Make tomato puree of tomatoes + green chilli + coriander stalks .
- Boil 3 to 4 cup of water .
METHOD
Heat oil + ghee in a thick bottom pan.
Add whole garam masalas and let it crackle.
Add onion and stir fry till golden brown.
Add ginger garlic paste and fry till raw smell leaves.
Add onion paste and give a nice mix.
Add red chilli pwdr and give a mix.
Add masala pwdr paste and stir fry for a min till oil separates .
Add tomato puree and mix well.Cover and cook till oil separates completely .
Add salt to taste and mix well.
Add boiled nutri and mix well.
Cover and cook for 5 mins .Stir in between .
Add capsicum and mix well.
Add 3 cup hot water and mix.
Cover and cook on low flame for 10 mins.
Note – STIR CONTINOUSLY , check if we need to add more water ,
Add the soya sauce + red chilli sauce and mix well.
Crush the kasoori methi leaves with hands and add .
Finally garnish with coriander leaves and off the flame .
Don’t make it very thick. It has to be of loose consistency, as it thickens on cooling .
I served it with store bought khulchas ,
NOTES
- Make sure that soya chunks are cooked well because otherwise, you will taste a raw flavour on eating.
- Please rinse the boiled soya chunks under running normal water.
- squeeze soya chunks well before adding to the gravy
- The secret to a perfect tasting soya chunks recipe is cooking it perfectly. If undercooked, the texture will not be pleasing.
- If over cooked, it will loose it’s texture completely and become mushy. So ensure to cook it right.
