PURPLE YAM ROAST RECIPE
PURPLE YAM ROAST RECIPE / KAND RECIPE
INGREDIENTS
- Purple yam – 250 grms or 300 grms
- Red chilli pwdr – 1 tsp or as per taste
- Turmeric pwdr – ¼ tsp
- Coriander pwdr – 1 tsp
- Sambar pwdr – 1 or 1 ½ tsp [ sambar pwdr also has chilli ]
- Asafoetida a pinch
- Garlic crushed or grated – 2 tsp
- Rice flour – 1 tsp
- Besan – 1 tsp
- Salt to taste
- Oil to fry – 2 tbsp
- Curry leaves – a sprig
METHOD
Peel the yam , wash it well and chop into small cubes.
Soak it in water for 5 mins and wash it in several water.
Drain the water completely .There should be no moisture .
Sprinkle little salt all over .
Heat oil in a flat frying pan .
Add curry leaves + garlic and stir fry for few seconds.
Immediately add the yam and give a nice mix .
Stir fry for 5 to 6 mins till it is half done .
Take all the masala pwdrs + rice flour + besan + salt in a plate and mix well . Sprinkle the masala powders all over and mix well.
Sprinkle 1 tbsp of water all over , close the lid and cook for 4 to 5 minutes.
Turn in between to make sure it gets cooked evenly.
The yam will get roasted well and crisp layer will be formed all over .
Off the flame .
Serve hot as a side dish .
Sprinkle little chaat masala / lemon juice while serving .[ optional ]
NOTES
- Instead of sambar masala ,you can use ¼ tsp garam masala pwdr and increase chilli pwdr accordingly.
- Adjust masala pwdr as per taste .
- Instead of frying we can also bake it .
- We can also add fennel / saunf powder .
