QUICK PUMPKIN GRAVY WITH FEW INGREDIENTS

DAL CURRY MADE WITHOUT DAL / QUICK PUMPKIN CURRY

INGREDIENTS

  • Pumpkin peeled and cubed – 2 cup
  • Tamarind – small piece OR 1 small tomato
  • Oil – 1 tbsp
  • Jeera + mustard seeds – 1 tsp
  • Fenugreek seeds – a pinch
  • Curry leaves few
  • Onion finely chopped – 1 small
  • Green chilli – 2 or as per taste
  • Salt to taste

METHOD

Take the pumpkin + salt + tamarind / tomato + water in a cooker .

Pressure cook up to 3 whistles.

Once done , blend it into a smooth puree  .

Add hot water to the pumpkin puree as per the consistency you want and mix well .dont make it very thin .

Heat oil in a  pan .

Crackle  mustard seeds + jeera + fenugreek seeds .

Add green chillies + curry leaves + onion + asafoetida .

Stir fry till translucent.

Add the cooked mashed pumpkin and mix well.

Bring it to a boil .

Simmer on low flame for  3 to 4 mins .

Off the flame and  garnish with coriander leaves .

Serve hot with rice + any side accompaniments.
