Falooda recipe

INGREDIENTS [ serves 2 ]

  • Boiled falooda sev – ½ cup
  • Soaked sabja seeds – ¼ cup
  • Chilled whole milk – 1 ½ cup
  • Mixed dry fruits finely chopped – 3 tbsp [raisins /almonds /pista /cashew ]
  • Jelly – ¼ cup rasberry or strawberry or any flavour to make it colourful
  • Milkmaid – 1 tbsp [optional ]
  • Tutti frutti – 2 tbsp
  • Rose syrup – 3 or 4 tbsp
  • Vanilla ice cream – 2 or 3 scoops

PREPARATION [ all ingredients must be chilled ]

  1. Soak 2 tsp of sabja in water and allow it to swell.
  2. Boil the falooda sev for 5 mins or as per the instruction given on the pkt , drain and put it in chilled water .[ while boiling you can add any essence to it ]
  3. Prepare the jelly as per the instruction given on the pkt .
  4. Blend the milk with 2 tbsp rose syrup + 1 ½ scoop of ice cream till frothy  . [icecream is optional here ]
  5. Keep all ingredients ready before you start assembling .

Take 2 tall glasses , add 1 tbsp of rose syrup in each.

Now add the soaked sabja seeds

Add the sev .

Drizzle little milkmaid .

Top it with jelly pieces .

Add little chopped dryfruits .

Add tutti frutti .

Now add the blended rose milk

Top it with vanilla icecream .

Garnish  with dry fruits + tutti frutti .

Drizzle little rose milk over the icecream .

Serve chilled immediately .

MANGO FALOODA

VARIATION MANGO FALOODA

Layer little mango puree in the middle and top it with little chopped mango pieces .[rest all procedure same ] Just to add colour I use khus syrup instead of rose syrup .

Same recipes can be tried with different seasonal fruits pulp and pieces .

NOTES.

  1. Quantity of each ingredients depends on your taste.
  2. You can also add finely chopped fruits like apple/ banana etc like we do for fruit custard .
  3. Well yes y not add custard apple pudding like the street side Mewad falooda or some rabri to make it rich /shahi . I added milkmaid .

  6. You can use different syrups instead of rose syrup to add different colour.

ROSE SYRUP AT HOME

Boil 2 cups sugar + 1 ½ cup water . Let it boil for 3 – 4 mins. At the end add ½ or ¾ tsp of red /pink food colour ,mix well and off the flame . Now add  1 tsp of rose essence and mix well. The syrup has to be thick and not of string consistency . Let the syrup cool . Store it in a bottle in the fridge and use as required .

How to make falooda sev ?

Take ½ cup of corn flour mixed with 1 1/2  tbsp sugar + 1 1/2  water and mix well so that there are no lumps .  Heat a pan on medium low flame. Pour this mixture into the hot pan and start stirring [ you can add any food colour or essence ]. Cook for about 7 to 8 mins , till the mixture becomes thick ,glossy , transparent and shiny. Immediately put it into a greased chakli mould with fine bhujia holes. Press the sev into a bowl with ice cubes + cold water . LET IT SOAK FOR 10 MINS .Once done refrigerate for minimum 30 mins and use . You can refrigerate and use it upto 2 days. [no need to cook more ] Use it directly .refrigerate for 2 days and use .
