Gur Ka Paratha is a traditional sindhi sweet dish loved by almost every one. It is tasty but health conscious people are reluctant to eat it as it is too sweet. However Gur is good for health, especially in winter. It is rich in iron and protects from ill effects of dust and smoke pollution. Whoever eats it cannot but control licking the fingers.

Busri is an incredible traditional recipe from Sindh, especially in rural areas and villages it is not only popular but very healthy sweet bread or Roti made with homemade Butter or Pure Desi Ghee

Only three ingredients are required to make this heavenly sweet Roti –  Butter homemade or Pure Desi Ghee, crushed Jaggery and plain wheat flour. It is not only fried in butter but the same is also inserted within two folds of roti which mixes in the melted jaggery within two folds of Roti like stuffed Paratha. The aroma of Butter is mind-boggling when mixes with crushed jaggery.

BENEFITS OF JAGGERY

It is generally recommended to consume jaggery in winter only as it is known to produce heat in the body. 

According to Ayurveda, jaggery has a hot potency (or taseer) which actually means that during its metabolism, heat is generated in the body. Each gram of jaggery gives four calories, thereby producing heat in the body. During winters the blood vessels get constricted due to cold weather and jaggery is responsible for dilating the blood vessels and further improves blood flow, thus causing the body to heat up.

The minerals found in jaggery are phosphorus, iron, magnesium, zinc, selenium, potassium and is loaded with antioxidants, which helps to boost the immune system and helps the body fight against diseases. Apart from being an all-rounder, jaggery is known to be beneficial for throat problems too. It reduces the irritation in the throat by creating a soothing layer on the inner lining of the throat and reduces dryness. It dilates the blood vessels in the area and improves blood flow, thus creating warmth in the respiratory tract. 

Combining jaggery with ghee, according to Ayurveda, aids in the cleaning of the digestive system. Additionally, the mixture promotes overall health and fitness, as well as healthy hair and nails. It improves one’s mood while also assisting in the treatment of iron-deficient anaemia.

INGREDIENTS: for 1 gur ka paratha

  • Wheat Flour dough for 1 paratha
  • Pure ghee to roast the roti
  • Homemade  Pure Butter [ makhan ] – as needed while serving
  •  Finely crushed / grated Jaggery – 1/4 cup
  • 2 tbsp finely chopped pista and badam
  • Cardamom pwdr – a pinch

METHOD

Mix jaggery + dryfruit + cardamom pwdr and keep aside .

Knead the plain wheat flour in the water like making normal bread and let it rest for 15 to 20 minutes. [ don’t add salt ]

Roll a big sized thick roti . (bit thicker than normal Roti)

Rub some ghee all over the roti and spread a layer of crushed jaggery over half portion .

Now close the roti by bring the edges together and pressing ,

Twist and turn the edges of the stuffed roti with your fingers as shown in the video

Heat a tawa  and put the roti on it and fry on both sides for 2 – 3 minutes.

Apply butter and fry it further till crispy on both sides.

Take it out and place it on a platter.

Now with the help of spoon make cuts in the top layer of roti and insert blobs of butter in the cuts.

The melted jaggery mixes with the butter  and becomes like a  jaggery sauce tasting heavens .

Enjoy Hot at breakfast or night, especially during the winter season.
