STREET STYLE JHARKHAND SPECIAL DHUSKA WITH ALOO CHANA SABZI RECIPE

Dhuska is fluffy, soft poris made with fermented rice – dal batter. It is served with loose aloo chana ki sabzi as a breakfast or brunch. 

INGREDIENTS

  • Raw rice – ½ cup
  • Chana dal – 1/4 cup
  • Urad dal – 2 tbsp
  • Green chilli ginger garlic paste – 1 tbsp
  • Jeera – ½ tsp
  • Turmeric – ¼ tsp
  • Ajwain – ¼ tsp
  • Black pepper powder – generous pinch
  • Salt to taste
  • Asafoetida – a pinch
  • Oil for deep frying

METHOD

Wash and soak the rice and dal for  4  hrs .

Drain the water and grind the soaked rice and dal into a thick smooth batter by roughly adding ¼ cup water .

Beat the batter well for 1 or 2 mins .

Cover and ferment batter for minimum 4 hrs to 8 or overnight in a warm place.

After fermentation, add water if needed and mix well . The batter should be of pouring consistency as shown in the video .

Now add green chilli + garlic + ginger paste, cumin seeds, turmeric powder, salt, hing, ajwain, and black pepper powder to the fermented batter . Mix well

Heat oil in a deep pan, and add batter with round shape ladle or spoon or as shown in the video . [ oil temperature should be high, when you add batter in it.

 Drop them one by one into hot oil, and also splash some hot oil on them.

Fry on medium flame on bothe sides till the colour changes a bit .

Drain and remove .

Serve dhuska with aloo chana sabzi.

Note – reduce 1 or 2 potato and add 1/4 soaked chana while cooking .
