Surti kadhi made with kadhi masala
SURTI KADHI / SURTI DANKHLU / GUJARATI KADHI MASALA

Kadhi is a traditional Gujarati preparation of a wonderful sweet and spicy curd mixture thickened with besan .
Surti kadhi is a sweet tangy yogurt-based dish made with gram flour, spices, herbs and seasonings made without pakoda. It makes for a quick comforting lunch or dinner paired with a side of steamed basmati rice or any rice varieties or roti.
INGREDIENTS KADHI MASALA
- 1/2 cup – Coriander Leaves
- 1/2 cup – Green Garlic
- 1/2 cup –Fresh White Haldi Chopped /ambi haldi
- 1/2 Cup – Curry Leaves
- 1/2 Cup – Tuver Dana ( Fresh Pigeon Pea Seeds )
- 15 to 20 or as per taste – Green spicy Chillies
- 1/2 Cup – Ginger
- 2 tbsp – Salt
METHOD FOR MAKING THE CHUTNEY
Make a fine Paste without adding water and Store in Airtight Container
NOTE – We Can Keep this Paste in Freezer for 1 Year and in Fridge 1 Week
INGREDIENTS FOR THE KADHI
- ½ cup fresh tuvar dana
- 1 cup fresh curd [ not very sour ]
- 2 tbsp besan
- 2 1/2 cup water
- Salt to taste
- 2 or 3 tbsp jaggery
- 2 tbsp ghee
- 1 sprig curry leaves
- 2 red chilli
- ¼ tsp asafoetida
- ½ tsp jeera
- 1/4 tsp methi dana
- 2 or 3 clove
- 2 tsp kadhi masala
- 1 tsp fresh garlic
- 1 tbsp finely chopped coriander leaves
METHOD FOR MAKING KADHI
Boil tuvar dana with little salt .
Blend curd + gram flour + 2 1/2 cup water + 2 tsp green kadhi masala + jaggery in a blender until it is creamy and smooth.
Heat ghee in another pan .
Add jeera , clove , methi , curry leaves + red chilli + asafoetida , mix well and let it crackle
Add the curd mixture and mix well
Stir and cook on medium flame for 5 mins till it starts boiling . .
Once it starts boiling , add the cooked tuvar dana and mix well.
Adjust salt as needed. remember we have added salt in the kadhi masala also .
Bring it to a boil and simmer for a min
Finally add 1 tbsp finely chopped coriander leaves + 1 tsp green garlic chopped and off the flame .
It makes for a quick comforting lunch or dinner paired with a side of steamed basmati rice or any rice varieties or roti.
