TINDA GRAVY RECIPE
SIMPLE TINDA GRAVY RECIPE
Tinda is also called as Indian squash, round melon, Indian round gourd or apple gourd or Indian baby pumpkin. When fresh, Tinda is soft with a mild flavor similar to a cucumber.
Tinda is a water-rich vegetable; it keeps your body cool and healthy. It also increases urinary flow, which helps excrete toxins from the kidney. In addition, it contains a lot of fibre, which helps in digestion, relieves stomach acidity, and prevents constipation.
INGREDIENTS
- 400 gm Tinda
- 1 finely chopped onion
- Few curry leaves
- 1 tsp ginger garlic paste
- 2 tomatoes finely chopped
- 1 green chilli, chopped
- 1 tsp Jeera
- Pinch of asafoetida
- ½ tsp turmeric powder
- 1 tsp or as per taste red chilli powder
- 2 tsp coriander powder
- ¼ tsp amchoor powder
- ¼ tsp sugar
- ½ tsp garam masala or 1 tsp kitchen king masala
- 2 tbsp ghee or oil
- 2 tbsp finely chopped coriander leaves
- Salt to taste
METHOD
Wash, peel and chop tindas into small cubes.
Heat oil in a pressure cooker.
Add jeera and let it splutter.
Add onions and curry leaves and stir fry till translucent .
Add ginger garlic paste and stir fry till raw smell leaves.
Add tomatoes + salt + sugar and stir fry till oil separates .
Add all the masala powders + asafoetida and stir fry for a min.
Add the tindas and mix well.
Stir and cook for a min .
Add coriander leaves and give a mix .
Add 1 water and mix well . Add water as per the consistency you want.
Cover and cook on meium flame upto 1 whistle.
After the first whistle lower the flame to lowest and cook for 10 mins.
Off the flame and allow the pressure to release.
Once done, open and give a nice mix and mash it with a ladle .
Gravy is ready to be served with any Indian bread or plain rice.
