Mumbai vada pav red chutney powder

INSTANT VADA PAV CHUTNEY POWDER /GARLIC CHUTNEY POWDER RECIPE /vada pav chutney powder recipe 

Vada Pav Chutney, Dry Garlic Chutney or Lasun Khobra Chutney takes your vada pav to a next level. This chutney is more like a powder than chutney though and a sprinkling on the pav makes the best Vada Pav Ever. It can also be used as an accompaniment with Dal Rice too.

INGREDIENTS

Salted Boondi or spicy boondi – 2 cup

Red chilli powder as per taste [ use kashmiri chilli powder for bright red colour ]

salt if needed

Garlic – 10 nos or as per taste

METHOD

  1. Store the dry chutney in an airtight container in the refrigerator after use , as we have added fresh garlic .
  2. Refrigerate the chutney after use, as the garlic is raw , it gets spoilt soon .
  3. To increase the shelf life of the same, you can even freeze this chutney in an airtight container or a freezer bag for about 25 days.

VARIATIONS

  • You can use this chutney for Vada Pav, Batata Bhaji Pav, Kanda Bhaji Pav or Samosa Pav.
  • You can also sprinkle over steamed rice along with some ghee.
  • Sprinkle it over any snack to perk up the taste. I sometimes also add it in my rolls and sandwiches to give it that Indian twist. 
  • Also, you can make the consistency of a paste by adding a little water, and add ghee to enjoy with dosas , Idli, Adai, or any South Indian breakfast items.
