Dhaba style khichdi recipe

DHABA STYLE DAL KHICHDI 

Dal Khichdi is an Indian style lentil and rice one-pot, gluten-free dish. Khichdi is wholesome, fulfilling, and a comforting vegetarian Indian food recipe. Dal Khichdi laced with ghee and served with pickle, sliced onions, and raita is an absolute family favorite lunch. A khichdi is super easy to cook and takes less than 30 minutes to get ready. One can easily cook it in a pressure cooker or an instant pot. There are many types of khichdi prepared across India. In certain regions, it has a porridge like consistency whereas, in others, it is cooked like a pulao.

Khichdi, is a dish in South Asian cuisine made of rice and lentils, but other variations include bajra and mung dal kichri. In Indian culture, it is considered one of the first solid foods that babies eat. Hindus, who avoid eating grains during fasting, eat Sabudana Khichadi made from sago. Kichri is a salty porridge.

INGREDIENTS

  • Rice – ¾ cup
  • Toor dal – 1 cup
  • Onion – 1
  • Tomato – 1
  • Green chilli – 3 or 4 or as per tast e
  • Turmeric – ½ tsp
  • Ghee – 3 or 4 tbsp
  • Jeera – 1 ½ tsp
  • Kashmiri red chilli pwdr – 2 tsp
  • Asafoetida – ¼ tsp
  • Crushed or grated garlic – 2 or 3 tbsp
  • Finely chopped coriander leaves for garnish
  • Broken red chilli – 1 or 2

METHOD

Clean wash and rinse the dal and  rice separately

Soak both for 15 to 20 mins  separately .

Cook the rice separately with salt till soft .The rice has to be soft and not mushy or hard.

Pressure cook the dal + green chilli + salt + turmeric + tomato till soft .

Blend the dal and keep aside .

Mix the dal and rice ,Adjust the consistency . If it is very thick , adjust by adding hot water .

Heat ghee in a pan , crackle the jeera.

Add crushed garlic + red chilli + asafoetida  and stir fry till golden .

Lower the flame and add the red chilli and give a mix .

Immediately add the khichdi and mix well .

Bring to a boil and simmer for a min and off the flame .

Garnish with coriander leaves .

Sewrve hot with any side accompaniments .
