AUTHENTIC ANARSA RECIPE / TRADITIONAL ANARSA RECIPE

An anarsa is an Indian rice-based biscuit commonly associated with the Hindu festival of Diwali in Maharashtra and Bihar, along with other special occasions. Its ingredients include jaggery, rice, poppy seed and ghee.

INGREDIENTS

  • 2 cup Rice
  • 2 cup Jaggery
  • Ghee for deep frying OR shallow frying
  • 2 tbsp Poppy seeds

PREPARATION

Clean and wash the rice 2 to 3 times

Soak the rice in water for 3 days.

****Do remember to change the water every day.

After 3 day drain [ it will smellsour  ] & spread the rice evenly on a clean cloth sheet for 3 – 4 hours.

Grind the dried rice into the fine powder.

Sieve it .

Now in a bowl mix grated jaggery & rice powder.

Add 1 tbsp ghee to it and knead the mixture to form a dough .

Keep the dough covered for 7 days . [you can keep upto 15 days ]

METHOD

Take the poppy seeds on a plate . [clean the poppy seeds ]

On the 7 th day ,grease your palm to avoid the dough from sticking.  [ you can also make on the 5 th day ]

Take a small portion of  the dough & make small lemon size ball from it , roll it into a smooth ball .

Keep this over the poppy seeds and press it lightly so that the poppy seeds stick .We have cover only side with poppy seeds .

Heat enough ghee in a deep frying pan on medium heat .

Fry the Anarsa in the ghee with the poppy seeds side up.

Keep on splashing ghee over the upper side of the Anarsa with the ladle without disturbing the Anarsa as we do for pooris.

Fry till the Anarsa turns golden brown on medium flame .

***no need to flip and fry on other side

Drain and remove it .

To drain the excess ghee keep the Anarsa in a vertical position.

Allow it to cool ,it will become crisp on cooling .

Store it in an airtight container.

NOTES

  1. The remaining mixture can be stored in clean container , it stay good for even 3 – 4 months.
  2. To reduce the fermenting period ,some use 1 tbsp curd
  3. Test fry first ,if it breaks then add rice flour and knead it again .
  4. After 7th day ,if the dough is dry ,you can use little milk to knead .
