A falooda is a South Asian version of a cold dessert made with noodles. It has origins in the Persian dish faloodeh, variants of which are found across West, Central, and South Asia. Traditionally it is made by mixing rose syrup, vermicelli, and sweet basil seeds with milk, often served with ice cream.

Falooda is a very popular sweet beverage available in many variations. Each one has their own favourite versions.

HERE in this falooda recipe , we will be replacing vermicelli with badam pisin .

WHAT IS BADAM PISNI – Easily available online

Almond gum or badam pisin is the natural gum obtained from the sweet almond tree. Is is a natural coolant and has jelly like properties that gives good texture and taste to your drink. 

Badam pisin – badam pisin is also known as katira gond in hindi. In english its known as tragacanth. Its also known as almond gum. In ayurvedic shops you can easily get katira gond. I bought them online from amazon.in.

Badam Pisin | Badam Gum | Almond Gum is a natural gum that has amazing health benefits from aiding weight loss to reducing body heat. It turns into a jelly when soaked in water and is used in the famous Jigarthanda drink. Usually badam pisin is had during summers in Tamil Nadu.

Don’t confuse yourself with ‘Gond’ used in ‘Gond laddoo’s. They are not the same, 

RECIPE –

FOR ONE SERVING: [ add ingredients as per taste ]

  • Rose Syrup Or any syrup – 1 tbsp
  • Soaked Badam Pisin / Edible Gum – 4 or 5 tbsp
  • Soaked Sabja Seeds/ Falooda Seeds – 1 or 2 tbsp
  • Chilled Milk mixed with any syrup or condensed milk – 1 cup [ syrup as per the sweetness you want ]
  • Dry Fruits finely chopped for garnish – 1 tbsp
  • Vanilla or any ice cream  – 1 or 2 scoop

PREPARATION

  1. Soak 1 tsp badam pisin pearls in water overnight. It swells up and forms a jelly like substance in the morning. Drain of the excess water through a strainer . There should not be any water.
  2. Soak sabja seeds / falooda seeds for 45 minutes or till they swell up.
  3. Mix 1 or 2 tbsp condensed milk or any syrup in the chilled milk and mix well .

METHOD

In a falooda glass or tall glass, add any syrup .

Add a layer of sabja seeds.

Now top it with  badam pisin .

Now slowly pour the chilled milk through the edge of the glass rim so that the ingredients don’t mix .

Add a scoop of ice cream .

Finally garnish with chopped nuts on the top.

Serve immediately .
