BEETROOT BEANS PORIYAL

Beets are loaded with vitamins and minerals yet low in calories and fat. They’re also a good source of several key nutrients, including folate, manganese, and copper.

French beans or Snap beans are all rich in vitamins A, C, and K, they are a good source of folic acid and heart protective calcium and fiber.

INGREDIENTS

  • Beetroot finely chopped  – 1 cup
  • Finely chopped beans – 1 cup
  • Green chilli – 2  or as per taste
  • Oil – 1 tbsp
  • Mustard seeds – ½ tsp
  • Urad dal – 1 tsp
  • Curry leaves – few
  • Grated coconut – 2 or 3 tbsp
  • Sugar – ¼ tsp
  • Salt
  • Water – 3 or 4 tbsp

METHOD

Heat oil in a pan .

Add mustard seeds + urad dal  and let it crackle .

Add curry leaves + green chilli  and give a mix .

Add beetroot and beans , mix well and stir fry for a minute .

Sprinkle  3 or 4  tbsp water and give a mix .

 Cover and cook till soft . [ hardly 7 to 8  mins depending on how finely  you have chopped ]

  • Don’t over cook the vege ,it has to retain shape .

Add salt and sugar , give a mix .

Lastly add the grated coconut  ,give a mix and off the flame . [ no need to cook after adding coconut ]

Serve with rice + dal / sambar + any accompaniments .
