BELL PEPPER SALAD RECIPE

BELL PEPPER SALAD / CAPSICUM SALAD RECIPE / STIR FRY BELL PEPPER SALAD RECIPE

Bell peppers are rich in many vitamins and antioxidants, especially vitamin C and various carotenoids. For this reason, they may have several health benefits, such as improved eye health and reduced risk of several chronic diseases. All in all, bell peppers are an excellent addition to a healthy diet.

Compared to green bell peppers, the red ones have almost 11 times more beta-carotene and 1.5 times more vitamin C. “One cup of red peppers provides three times more vitamin C than an orange. 

 INGREDIENTS

  • Red bell pepper – ½ cup
  • Yellow bell pepper – ½ cup
  • Green capsicum – ½ cup
  • Onion thinly sliced – ½  cup
  • Chilli flakes – 1 tsp as per taste
  • Mixed herbs or oregano – 1 tsp or as per taste
  • Salt as per taste
  • Olive oil – 1 tbsp
  • Finely chopped garlic – 1 tsp

METHOD

Thinly slice the onion and bell peppers .

Heat oil in a pan , add garlic and just give a mix .

Add the bell pepper and mix well .

 Stir fry for just 5 mins.

Don’t overcook or make it very soft . it should have a crunch .

Add red chilli pwdr + herbs + salt and mix well .

Off the flame and transfer to serving bowl .

Cover and refrigerate for an hour before serving.

NOTES

  1. You can add more ingredients like orange bell pepper, basil leaves, parsley, olive, boiled corn, stir fried mushroom ,broccoli  etc etc
  2. To add proteins to it , add chicken / soya chunks or paneer
i served it with chicken , to add proteins
