BEST PULAO RECIPE

TASTY PULAO RECIPE / PILAF / PILAU / PULAV

INGREDIENTS

  • Basmati Rice – 1 cup
  • Oil + ghee –  2 tbsp
  • Whole garam masala – 2 green cardamom + 1 black cardamom + 1 star anise + ¼ tsp black pepper + 1 bay leaf + 2 clove + 1 cinnamon stick
  • Thinly sliced onion – 1
  • Tomato finely chopped – 1 big
  • Curd – 1 tbsp
  • Ginger garlic paste – 2 tsp
  • Green chilli – 2
  • Fenugreek leaves – 1 tsp
  • Finely chopped coriander + mint leaves – ¼ cup
  • Garam masala pwdr – ¼ tsp
  • Coriander pwdr – ½ tsp salt to taste
  • Lemon juice – 1 tbsp
  • Sugar – ½ tsp
  • Water – 2 ¼ cup or 2 ½ tsp depending on th equality of rice

METHOD

Soak rice for 30 mins .

Heat oil + ghee in pan /

Add whole garam masala and give a mix .

Add  onion and stir fry till golden .Its very important to fry the onion well .

Add ginger garlic paste and stir fry till raw smell leaves .

Add tomato + green chilli + salt and stir fry till oil separates .

Add coriander pwdr + garam masala pwdr + sugar  and mix well.

Add mint leaves + coriander leaves + kasoori methi  leaves  and stir fry for a min .

Lower the flame and add the beaten curd and give a nice mix.

Add water + lemon juice and bring to a boil .

Adjsut salt if needed.

Add the drained rice and give a gentle mix,

Don’t over mix else the rice will break ,

Cook on medium flame till the water comes to rice level.

Now place a tava below the pan and lower the flame .

Cook on lowest flame for 15 mins and off the flame.

Don’t open immediately , let it rest for min 15 to 20  mins .

Once done give a gentle mix and serve hot with any side accompaniments .
