CARROT RAITA / CARROT PACHADI

INGREDIENTS

  • Fresh Curd – 1 or 1 1/2 cup cup [ chilled ]
  • Finely grated carrot – 1 cup
  • Finely chopped green chilli – 1 or as per taste
  • Finely chopped coriander leaves – 1 or 2 tbsp
  • Chaat masala – 1/2 tsp
  • Roasted jeera pwdr – 1/2 tsp
  • Black salt / salt to taste
  • Oil or ghee – 1 tsp
  • Mustard seeds – ¼ tsp
  • Hing – a pinch
  • Few curry leaves

METHOD

Whisk the curd well , add grated carrot + green chilli + salt + chaat masala and mix well.

In small pan heat oil, add mustard seeds and let it crackle.

Add asafoetida and add this tempering into curd mixture and give a stir.

Raita is ready to be served with any rice variety or parathas.

Notes

  1. You can also add chopped onion .
  2. Instead of green chilli you can add red chilli pwdr .
  3. Instead of adding green chilli in the curd ,you can add it while tempering .
  4. Serve it chilled.
  5. add 1 tbsp of  coarse peanut pwdr for crunchiness.
